Clos de Gat is situated in the foothills of the Judean Mountains, bordering Israel’s biblical Ayalon Valley, where Joshua defeated the Five Kings. An ancient “Gat” (Hebrew for wine press), pre-dating the Roman period by a thousand years, is located by the house set in the heart of the vineyards. The region’s rolling hills and valleys have supported grapevine cultivation for thousands of years. The combination of a thin layer of topsoil atop a bed-rock of limestone, together with a unique micro-climate, make it possible to grow grapes of outstanding quality.
Clos de Gat relies on the vineyard’s natural yeasts for the fermentation process, the wines thus gain greater complexity and fully complete the expression and uniqueness of Clos de Gat’s “Terroir”. The region’s rolling hills and valleys have supported grapevine cultivation for thousands of years. The combination of thin topsoil on a bedrock of limestone, together with a unique micro-climate make it possible to grow grapes of outstanding quality. After all factors, however small, of soils, sub-soils, elevations and micro-climates had been taken into account, each plot was planted with the variety most likely to produce the greatest expression of the grape.
In 1998 owner-winemaker Eyal Rotem who studied winemaking in Australia, began planting vines and building a winery on the land surrounding his house, thus turning along-harbored dream into reality. After months of painstaking analysis of diverse plots of land, Eyal Rotem planted a selection of noble grape varieties: Cabernet Sauvignon, Merlot, Petit Verdot, Syrah and Chardonnay, with small, experimental amounts of Sauvignon Blanc and Viognier. Fortunately, and, in part, due to the scientific studies undertaken – and no small measure of pure intuition – Eyal’s plot choices for the different grape varieties proved accurate, as subsequent vintages have consistently shown.
